Ultimate Keto Snickers Bars
Ingredients
Caramel sauce
- 3 tbsp butter
- 1/2 cup heavy cream
- 1/3 cup allulose
- 1/2 tsp vanilla extract
- Pinch of salt
Nougat layer
- 4 oz cream cheese, softened
- 1/4 cup almond butter (or peanut butter)
- 2 tbsp coconut oil, melted
- 1/4 cup powdered keto sweetener
- 1/2 tsp vanilla extract
- 1/2 tsp beef gelatin plus 1 tbsp warm water
Peanut layer
- 1/4 cup roasted peanuts, chopped
Chocolate coating
- 3/4 cup sugar-free chocolate chips
- 1 tbsp coconut oil
Instructions
Caramel
- In a small saucepan over medium-low heat, melt the butter. Stir in the allulose, then the heavy cream, and cook 2–3 minutes, stirring constantly.
- Simmer 5–8 minutes, stirring frequently, until golden brown. Remove from the heat and stir in the vanilla and salt.
- Let cool 10 minutes before using; it thickens as it cools.
Nougat
- Sprinkle the gelatin into the warm water and let sit 2–3 minutes until thickened.
- In a medium bowl, whisk the cream cheese, almond butter, coconut oil, sweetener and vanilla. Stir in the gelatin mixture until smooth.
- Spread evenly in a silicone pan sprayed with avocado oil and freeze 15 minutes.
Layer
- Spread the caramel over the nougat and sprinkle the chopped peanuts evenly on top. Freeze 15 minutes to an hour until firm.
Coat in chocolate
- Melt the chocolate chips with the coconut oil in 30-second bursts, stirring between each.
- Slice into 6–8 bars. Using a fork, dip each bar in the chocolate to coat completely.
- Place on a parchment-lined tray and freeze 10–15 minutes until set.
