Ingredients

  • 1 cup almond flour
  • 3 Tbsp coconut flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tsp xanthan gum
  • 1 large egg
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp water
  • 11 oz Condensed Keto Cream of Chicken Soup (⅓ of your condensed batch)
  • 4 cups cooked chicken, diced or shredded
  • 1 Tbsp butter
  • ½ cup diced onion
  • ½ cup diced celery
  • ½ cup diced mushrooms
  • ½ cup diced carrots (optional )
  • ¼ cup chopped green beans
  • ¼ cup heavy cream
  • ¼ tsp thyme
  • ¼ tsp black pepper
  • Salt to taste

Instructions

  1. In a food processor, pulse almond flour, coconut flour, baking powder, salt, and xanthan gum a few times to combine.
  1. In a small bowl, whisk egg, then stir in apple cider vinegar and water.
  1. Add wet mixture to the food processor and pulse until a dough forms (it will be sticky).
  1. Remove dough, put in yellow bowl, and refrigerate 10 min until pliable but not sticky.
  1. Place dough between two sheets of parchment paper and roll out to about ⅛-inch thick—large enough to cover your pie dish.
  1. In a large skillet, melt butter and sauté onion, celery, mushrooms, and carrots for 5–7 min until soft and lightly golden.
  1. Add green beans and cook 2 min more.
  1. Stir in chicken, condensed soup, heavy cream, thyme, pepper, and salt.
  1. Simmer 3–5 min, stirring, until creamy and thickened. The mixture should be rich but spoonable.
  1. Pour into a 9.5-inch pie dish or similar baking dish.
  1. Lay the rolled dough over the hot filling, trimming edges and cutting a few small slits for steam.
  1. Bake at 375°F (190°C) for 20–25 minutes, or until the crust is golden brown and the filling is bubbling at the edges.
  1. Let rest 15 minutes before serving so the filling can set.
