Sugar-Free Keto Pecan Pie
Ingredients
- 1 keto pie crust
- 1 1/2 sticks butter
- 1/2 cup Magic Baker Brown sweetener
- 1/2 cup Magic Baker sweetener
- 1 1/2 tsp vanilla extract (or 1 tsp vanilla plus 1/2 tsp maple extract)
- 1/4 tsp salt
- 3 large eggs
- 2 cups pecan halves or pieces
Instructions
- Preheat the oven to 350°F. Make the crust and let it cool, or use your favorite keto crust.
- Melt the butter in a large saucepan over medium heat. Add both sweeteners and stir until dissolved.
- Simmer 3–4 minutes, until darker and thicker. Remove from the heat and let it cool.
- Once cool, stir in the vanilla (and maple) and salt, then the eggs, until smooth. Make sure the mixture is cool first.
- Put the pecans in the crust and pour the syrup over the top. Cover the crust edges with a pie shield.
- Bake 45–50 minutes, until mostly set but the middle still jiggles a little. Cool completely. Enjoy!
