Ingredients

Collard greens

  • 3 bags washed collard greens (about 3 lbs), stems removed
  • 1/2 pack bacon, chopped
  • 1/4 small onion, finely chopped
  • 1 lb smoked ham hock
  • 2 tbsp Magic Baker sweetener
  • 1 tbsp seasoned salt or Cajun seasoning
  • 2 tsp Worcestershire sauce
  • 2 tsp apple cider vinegar
  • 2 tsp liquid smoke
  • 1/2–1 tsp crushed red pepper flakes
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika

Keto black-eyed "peas"

  • 1/2 pack bacon, chopped small
  • 1 small onion, small dice
  • 1 stalk celery, small dice
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 can black soybeans

Instructions

Collard greens

  1. Remove the stems from the greens (wash and chop if using fresh).
  2. Cook the bacon until about halfway done and add it to a 12-quart stock pot. Add the onion and cook until translucent.
  3. Add the ham hock and enough water to submerge it. Cover and cook over medium-high heat about 30 minutes, until the ham hock is fairly tender.
  4. Add the greens and enough water to just barely cover them.
  5. Add the rest of the ingredients and cook covered at least 2 hours, until completely tender and silky.

Black-eyed "peas"

  1. Cook the bacon in a small saucepan until almost crispy. Add the onion and celery and cook until translucent.
  2. Stir in the spices until fragrant.
  3. Add the can of beans with its liquid and heat through. Enjoy!
