Ingredients

  • 1 medium yellow onion, very thinly sliced (you can also use a box grater or mandoline)
  • 1 large egg
  • 2 tbsp heavy cream or unsweetened almond milk
  • ½ cup crushed pork rinds
  • ¼ cup grated Parmesan cheese
  • 1 tbsp oat fiber (optional)
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Preheat oven: 400°F (or 375°F if using convection).
  2. Line a large baking sheet with parchment paper.
  1. Slice the onion very thin, then pat dry thoroughly with paper towels — excess moisture prevents crisping.
  1. In one bowl, whisk together egg and cream.
  1. In a second bowl, mix crushed pork rinds, Parmesan, oat fiber, onion powder, garlic powder, salt, and pepper.
  1. Dip the onions into the egg mixture → toss in dry coating → repeat once more for a thicker layer.
  1. Arrange coated onions in a single, even layer on the baking sheet.
  2. Lightly spray or drizzle with avocado oil.
  3. Bake 15–20 minutes total, tossing halfway through, until onions are deep golden and crisp.
  4. (Keep an eye on them after 12 minutes — they brown fast near the end.)
  1. Transfer to a rack or clean parchment and let cool 15 minutes. They’ll crisp fully as they cool.
