Mock Apple Fritter Cake (No Apples, No Sugar, No Wheat)
Every fall I walk past the apple fritter in the bakery case and do the math in my head. This year I quit doing the math.
There are no apples in this cake. No sugar, no wheat. The thing standing in for the apples has been sitting in your garden all summer, and when you taste one cube of it, your brain does a little double-take.
Bake it in an 8x8 pan.

Mock Apple Fritter Cake (No Apples, No Sugar, No Wheat)
Ingredients
Mock apple filling
- 2 cups zucchini, peeled and cut into apple-size cubes
- 1 tbsp butter
- 2 tbsp brown sweetener
- 1 tsp cinnamon
- 1 tbsp lemon juice
- Pinch of salt
- 1 tsp apple extract (stir in off the heat; heat kills it)
Cinnamon swirl
- 1/3 cup brown sweetener
- 1 1/2 tsp cinnamon
- 2 tbsp melted butter
Cake
- 2 cups almond flour
- 1/4 cup unflavored whey protein isolate
- 1/2 cup granulated sweetener
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 3 eggs
- 1/2 cup sour cream
- 1/4 cup melted butter
- 1 tsp vanilla
- 1/2 tsp apple extract
Glaze
- 1/2 cup powdered sweetener
- 2 tbsp heavy cream
- 1/2 tsp vanilla
- Splash of apple extract
Instructions
- Cook the filling 7 to 10 minutes on medium until the liquid turns syrupy. Off the heat, stir in the apple extract.
- Mix the swirl ingredients into a thick paste.
- Heat the oven to 350°F. Add the wet cake ingredients to the dry and stir until fully combined. Fold in 3/4 of the filling, saving some for the top.
- Spread half the batter in the pan, add half the swirl, and run a skewer or knife through to swirl it. Add the remaining batter, the reserved filling and the rest of the swirl, then swirl again.
- Bake 30 to 35 minutes. Test with a toothpick in the cake part: moist crumbs are fine, wet batter means it goes back in.
- Cool at least 30 minutes, or all the way for clean slices. Whisk the glaze thick and drizzle it heavily. Enjoy!
