Low Carb Sweetened Condensed Milk
Ingredients
- 2 cups heavy cream
- 1/2 cup Sweetener
- 2 tbsp butter
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Add heavy cream and Sweetener to a saucepan.
- Bring to a gentle simmer over medium heat, stirring often.
- Reduce heat to medium-low and continue simmering 25–35 minutes, stirring regularly, until the mixture is reduced by about 1/4 and coats the back of a spoon.
- Remove from heat and stir in butter, vanilla extract, and a pinch of salt, or you can add it all in together like I do if you watch the thickness.
- Let cool. It will thicken significantly as it cools.
- Store in the refrigerator up to 1 week.
- For extra thickness (for pies or fudge), simmer longer or add 1 additional tablespoon of butter at the end.
- Warm gently before using if it becomes too thick in the fridge.
