Low Carb Magic Cookie Bars
Ingredients
- 1/2 cup oat fiber
- 1/2 cup almond flour
- 1/4 cup Sweetener Blend
- 1/4 cup butter, melted
- 1/2 tsp vanilla extract
- Pinch of salt
- 1 1/2 cups low-carb sweetened condensed milk
- Pour this evenly over the crust.
- 1 cup sugar-free chocolate chips
- 3/4 cup unsweetened shredded coconut
- 1/2 cup chopped pecans or walnuts
- Optional: 1/4 cup butterscotch chips
Instructions
- Bake at 350°F for 23–28 minutes, or until edges are golden and the center looks set but still soft.
- Cool completely in the pan, then chill 1 hour for clean cuts.
- Cut into 12–16 bars depending on how thick you want them.
- The bars firm up dramatically as they cool.
- If your condensed milk is very thick, warm it slightly before pouring.
- If using an 8x8 pan, bars will be thicker and richer.
- Toasting the coconut beforehand gives a deeper “classic magic bar” flavor.
