Keto Southern Biscuits and Sausage Gravy
Ingredients
Biscuits
- 1 cup egg whites
- 1 tsp fresh-squeezed lemon juice
- 1 cup pork breadcrumbs
- 1 tsp baking powder (not expired)
- 1/4 tsp salt
- 4 tbsp butter, very cold or frozen, chopped
- 1/3 cup sour cream
Sausage gravy
- 16 oz breakfast sausage
- 1/2 sweet onion, diced
- 2 cloves garlic, minced
- 8 oz cream cheese, softened
- 2/3 cup beef bone broth
- 1/4 cup grated Parmesan or other hard cheese
- Salt and pepper, to taste
Instructions
Biscuits
- Preheat the oven to 400°F before you start anything else. Chop the butter and chill it in the fridge or freezer. Line a cookie sheet with parchment.
- Whip the egg whites on high. Once they bubble, add the lemon juice and whip to very stiff peaks.
- In a separate bowl, mix the baking powder and pork breadcrumbs, then stir in the cold butter, sour cream and salt.
- Fold the dry mixture into the whites. Scoop onto the cookie sheet and bake 13–16 minutes.
Gravy
- Brown the sausage in a large skillet over medium heat, letting the crumbles form a crust, 7–8 minutes.
- Push the sausage aside and sauté the onion and garlic until they start to brown.
- Stir in the cream cheese, then the broth, then the Parmesan. Simmer until thick and smooth.
- Reduce to medium-low, simmer a couple of minutes, and season with salt and pepper.
- Put a couple of biscuits on your plate and smother with gravy. Enjoy!
