Ingredients

  • 1 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1/2 cup powdered keto sweetener, plus extra for coating
  • 1 cup finely chopped pecans or walnuts
  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1/4 tsp xanthan gum
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • Pinch of nutmeg

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment or a silicone mat.
  2. In a large bowl, cream the butter, vanilla and powdered sweetener until light and fluffy.
  3. In another bowl, whisk the almond flour, nuts, coconut flour, xanthan gum, salt, cinnamon and nutmeg. Gradually add to the wet ingredients and mix until a dough forms.
  4. Roll into 1-inch balls and place on the baking sheet about 1 inch apart.
  5. Bake 15–18 minutes, until the bottoms are lightly golden. Cool on the sheet about 10 minutes.
  6. While still warm, roll each cookie in powdered sweetener. Let cool completely, then roll again for a thick coating. Enjoy!
