Ingredients

Chocolate cookies or chaffles

  • 1 egg
  • 1 egg white
  • 2 oz cream cheese
  • 1/2 cup shredded low-moisture mozzarella
  • 1/4 cup Magic Baker sweetener
  • 2 tbsp cocoa powder (I use black cocoa)
  • 2 tbsp coconut flour
  • 1/2 tsp baking powder

Filling

  • 1/2 stick butter, room temperature
  • 1 1/4 tsp vanilla extract
  • 1 1/4 cups powdered sweetener (use plain allulose if you don't like it super sweet)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F if making cookies, or preheat your waffle maker and spray it with oil if making chaffles.
  2. Blend the egg, egg white, cream cheese and mozzarella until smooth. Add the remaining cookie ingredients and blend again.
  3. For chaffles, cook in the waffle maker until done. For cookies, spray a silicone tray, fill each cavity about a third full or less, and bake until done.
  4. For the filling, mix the butter and vanilla in a stand mixer with the paddle attachment. Stir in the powdered sweetener with a spatula first, then mix again until combined.
  5. Spread the filling between the cookies or chaffles. Chill about 30 minutes for the best texture. Enjoy!
