Keto Lava Cake
Ingredients
- 2 tbsp butter
- Heaping 1/4 cup sugar-free dark chocolate
- 2 large eggs
- 1 tbsp dark cocoa powder
- 1/2 tsp vanilla extract
- Pinch of salt
- 2 tbsp almond flour (or my keto flour)
- 2 tbsp keto sweetener
- 1 square sugar-free chocolate bar (for the center)
Instructions
- Preheat the oven to 375°F. Grease 1 silicone mold with avocado oil spray or butter.
- In a heat-safe bowl, microwave the butter and chocolate in 30-second intervals until melted. Stir smooth and let cool slightly.
- Whisk in the eggs, sweetener, vanilla, cocoa powder, almond flour and salt. Mix until smooth.
- Pour the batter into the mold. Press a square of chocolate into the center; don't let it touch the bottom.
- Bake 20 minutes, just until the edges are set but the center is soft.
- Invert onto a plate and dust with powdered sweetener. Cut into the middle for the dramatic lava moment. Serve with keto whipped cream or berries.
