The best keto honey recipe I've ever done. Drizzle it over keto pancakes, mix it into yogurt, sweeten desserts or add it to your tea.

For keto maple syrup, use the exact same ingredients but swap maple extract for the honey extract.

Ingredients

  • 1 cup hot water (not boiling)
  • 1/4 tsp xanthan gum
  • 1/8 tsp cream of tartar
  • 1/2 cup Magic Baker's Brown (or brown sweetener with a little molasses in it)
  • 1 1/2 tsp honey extract, or to taste

Instructions

  1. Optional, if you're worried about lumps: add half the hot water to a bowl with the xanthan gum and cream of tartar, and whisk until the lumps dissolve a little (see video).
  2. Add the hot water and Magic Baker's Brown to a pot over medium heat.
  3. Once it heats up pretty good, add the xanthan gum and cream of tartar (or the mixture from step 1) and whisk it up well.
  4. Reduce the heat to low and simmer 10–15 minutes, until it thickens just a little. It will still be thin; it thickens in the fridge.
  5. After no longer than 15 minutes, take it off the heat and stir in the honey extract. Start with 1/2 tsp, taste, and add more 1/2 tsp at a time.
  6. Let it cool completely, pour into a jar and refrigerate at least 6 hours, preferably overnight, before checking the texture.
  7. If it's thinner than you want, bring it back to a boil and simmer no longer than 5 minutes. Cool and refrigerate again. Repeat until it's the consistency you want.
  8. Keep refrigerated. It should stay good at least 2 weeks. Enjoy!
