Ingredients

  • About 3 lbs butterflied leg of lamb
  • 1 1/2 tbsp oregano (or 1 tbsp oregano plus 1/2 tbsp rosemary)
  • 1 tbsp garlic
  • 2 tsp salt
  • 1 tsp black pepper
  • 1/3–1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 1/2 cup olive oil, plus more for searing

Instructions

  1. Mix everything in a gallon zip-top bag and massage it in. Refrigerate at least 3–4 hours, preferably 24.
  2. Take the lamb out of the fridge 1 hour before cooking.
  3. Preheat the oven to 350°F. Line a baking sheet with foil and set a cooling rack on it.
  4. Heat olive oil in a skillet over medium-high heat and sear the lamb 2–3 minutes per side, as brown as you like.
  5. Transfer to the rack, insert a thermometer into the thickest part, and roast 20–25 minutes, to 135°F for medium-rare.
  6. Tent loosely with foil and rest 10 minutes before serving.
