Country fried steak or chicken fried steak: what's the difference? It's all in the gravy. Use my keto brown gravy for country fried steak, or my keto white gravy for chicken fried steak.

Crispy, juicy and Southern, without the carb overload. Don't flip more than once or fry more than two at a time, or the breading will fall off.

Ingredients

  • 4 cube steaks (about 1/3 lb each)
  • Salt and pepper

Breading

  • 3/4 cup pork breadcrumbs
  • 3/4 cup almond flour
  • 2 tsp black pepper
  • 2 tsp salt
  • 3/4 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder

Egg wash

  • 1 1/2 cups almond milk (or 1 cup heavy cream plus 1/2 cup water)
  • 2 tsp hot sauce
  • 2 eggs

For frying

  • 1 cup avocado or olive oil

Instructions

  1. Whisk together the breading ingredients. In a separate container, whisk the almond milk, hot sauce and eggs.
  2. Dry the steaks with a paper towel, season with salt and pepper, let sit 5 minutes, and pat dry again.
  3. Dredge in the breading, shake off the excess, dip in the egg mixture, then dredge in the breading again.
  4. Place on a sheet pan or rack and press any remaining breading on so the steaks are completely coated. Let sit 10 minutes.
  5. Preheat the oven to 225–250°F.
  6. Heat about 1/4 inch of oil in a skillet over medium-high heat.
  7. Fry two steaks at a time, 3–4 minutes per side, until golden. Flip only once.
  8. Drain on paper towels and keep warm in the oven. Serve with keto gravy.
