Coconut filling

  • 1 1/2 cups unsweetened shredded coconut
  • 1/3 cup coconut oil, melted
  • 1/4 cup powdered keto sweetener
  • 2–4 tbsp heavy cream or coconut cream
  • 1/2 tsp vanilla extract
  • Pinch of salt

Topping

  • Whole roasted almonds (2 per bar)

Chocolate coating

  • 3/4 cup sugar-free chocolate chips
  • 1 tbsp coconut oil

Instructions

Coconut filling

  1. In a bowl, combine the coconut, melted coconut oil, sweetener, vanilla and salt.
  2. Add the heavy cream 1 tbsp at a time until the mixture sticks together but isn't too wet.
  3. Spray a silicone loaf pan with avocado oil. Press the coconut mixture firmly into the pan and smooth the top.
  4. Top with 2 almonds per bar and freeze 30–45 minutes until firm.

Coat in chocolate

  1. Melt the chocolate chips with the coconut oil in 20-second bursts, stirring until smooth.
  2. Slice the frozen coconut block into 6 equal bars.
  3. Using forks or a dipping tool, coat each bar in chocolate. Place on a parchment-lined tray and return to the freezer to set.
