Frozen Strawberry L. Reuteri Yogurt
Ingredients
- 1 1/2 cups L. reuteri yogurt
- 1 cup heavy cream
- 1/2 heaping cup (or more) fresh strawberries, chopped
- 2 tsp to 1 tbsp strawberry extract
- 1/2 cup allulose
- 1/4 tsp gelatin powder
- 1/8 tsp xanthan gum
- 1 tsp lemon juice
- Pinch of salt
Instructions
- In a small saucepan, gently heat the strawberries with the lemon juice and allulose, mashing them for 5–6 minutes until juicy and softened.
- Sprinkle in the gelatin and xanthan gum, whisking well to dissolve. Remove from the heat, let cool slightly, then blend.
- In a mixing bowl, stir together the strawberry mixture, L. reuteri yogurt, heavy cream, strawberry extract and salt until completely smooth.
- Cover and refrigerate at least 2 hours, until very cold.
- Pour into a pre-frozen ice cream maker bowl and churn 20–25 minutes, until thick and creamy.
- Transfer to an airtight container and freeze 2–4 hours for a scoopable texture. If it firms up too much, let it sit out 5–10 minutes before serving.
