Duke's mayo is a Southern classic, and this is my personal favorite keto version, made with avocado oil in about a minute with an immersion blender.

It's creamy and flavorful, perfect for sandwiches, salads and dips. I also have an updated Duke's Mayo 2.0 on the site.

CourseSauces & Condiments

Ingredients

  • 2 large eggs, room temperature (or, preferably, 3 egg yolks)
  • 1 tbsp white wine vinegar
  • 1 tbsp apple cider vinegar
  • 1 tbsp fresh-squeezed lemon juice
  • 1/4 tsp salt
  • 1/8 tsp white pepper
  • 1/4 tsp dried mustard
  • 1/4 tsp paprika (not smoked)
  • 3/4 cup avocado oil

Instructions

  1. Add the eggs (or yolks) to a pint mason jar.
  2. Carefully add the vinegars, lemon juice, salt, white pepper, mustard and paprika.
  3. Very slowly add the avocado oil without disturbing the yolks.
  4. Put an immersion blender at the bottom of the jar and blend on high until the bottom turns white.
  5. Keep it running and slowly pull the blender up (or tilt it slightly) to draw the oil into the emulsion, until everything is white and creamy.
