Ingredients

Keto chocolate clusters

  • 1 (9 oz) bag sugar-free chocolate chips
  • 1 cup mixed nuts or seeds
  • 1 cup unsweetened coconut flakes
  • 3 tbsp butter
  • 2–3 tbsp peanut or almond butter (optional)

Keto pineapple pudding whip

  • 16 oz cream cheese, softened
  • 1 3/4 cups heavy cream if using pineapple juice (2 cups if not)
  • 1/2–1 cup sweetener, to taste
  • 1 (6 oz) can pineapple juice (very optional; adds 24 g carbs to the whole dessert) OR 2 tsp extract of your choice

Keto Rice Krispie treats

  • 6 cups pork rinds (chocolate, regular, or both)
  • 1 1/2 sticks (12 tbsp) butter, divided
  • 2 bags Max Mallows

Instructions

Clusters

  1. Mix the nuts or seeds and coconut in a bowl.
  2. Melt the butter over medium-low heat until half melted, add the chocolate chips and stir constantly until melted. Stir in the nut butter if using.
  3. Pour over the nuts and coconut, drop onto a parchment-lined baking sheet, and refrigerate until set.

Pineapple whip

  1. Whip the cream cheese with a hand mixer until fluffy. Add the pineapple juice (if using) and cream, then the sweetener, and mix to your desired consistency.
  2. Refrigerate at least half an hour.

Rice Krispie treats

  1. Break or chop the pork rinds. Melt 1 stick of butter and stir it into the pork rinds to coat.
  2. Spread on a parchment-lined baking sheet and bake at 350°F for 5 minutes. Transfer to a bowl.
  3. In a pot over medium-low heat, melt the remaining half stick of butter halfway, then add the Max Mallows and melt.
  4. Pour over the pork rinds, mix, and press into a 7x7 or 8x8 pan. Cool, cut and enjoy.
